ZUCCHINI BREAD 2 eggs, beaten 1 c. oil 2 c. sugar 2 c. grated zucchini 1 Tbsp. vanilla extract 3 c. flour 1 tsp. salt 1 tsp. soda 1 Tbsp. cinnamon 1/4 tsp. baking powder 1/2 c. coconut (optional) 1/2 c. nuts (optional) Mix eggs, oil, zucchini and vanilla in bowl. Add remaining ingredients, mixing well. Pour batter into 2 greased loaf pans. Bake at 350 degrees until bread tests done.
