2 c. sugar
1/2 c. oil
1/2 c. sour cream
1 tsp. vanilla
1 tsp. cinnamon
1 tsp. salt
1 tsp. baking soda
1/4 tsp. baking powder
2 c. grated zucchini
3 c. sifted flour
1 c. chopped nuts
1 c. raisins
Beat eggs until foamy in mixing bowl. Add sugar, oil,
sour cream, vanilla, cinnamon and zucchini. In a separate
bowl, mix flour, salt, baking soda and baking powder. Add
flour mixture to zucchini mixture slowly and stir well. May
add nuts and raisins (optional). Turn batter into a greased
loaf pan and bake at 350 degrees for 1 hour and 20 minutes. Cool
