BLUEBERRY CREAM CHEESE MUFFINS 4 oz. cream cheese 1 Tbsp. lemon juice 2 tsp. vanilla 2 eggs 1/2 c. milk 4 Tbsp. melted unsalted butter 2 c. cake flour 3/4 c. sugar 1 1/2 tsp. baking powder 1/2 tsp. baking soda pinch of salt 1 1/4 c. blueberries 1 1/2 Tbsp. sugar 1 tsp. cinnamon Preheat oven to 350 degrees. Use paper liners in muffin tins (12). In a mixer, whip cream cheese with lemon juice and vanilla until smooth. Beat in eggs. Add milk and butter. Mix well. Combine dry ingredients in small bowl. Beat into cream cheese mixture well. Gently fold in blueberries. Pour into muffin tins 3/4 full. Sprinkle top with cinnamon mixture. Bake 30 minutes or until tester comes out clean.
