APPLESAUCE CHEESE PIE

1 (10-inch) crumb crust (have
ready)
1 (No. 2) can applesauce
(2 1/2 c.)
1 (15 oz.) can condensed milk
rind (grated) and juice of 1
lemon
3 egg yolks, beaten
3 egg whites, beaten stiff
1/8 tsp. salt
whip cream and cinnamon

Mix applesauce, condensed milk, rind and juice of lemon
and egg yolks. Beat egg whites stiff with salt added. Fold
egg whites into applesauce mix. Pour into crumb crust. Bake
in 375 degrees oven for about 50 minutes. Cool. Spread with whip
cream. Sprinkle with cinnamon. Refrigerate until served.
This is better made a day or 2 ahead. But put whip
cream on the day you serve.
