1 1/2 c. flour
1/2 c. yellow corn meal
2 Tbsp. sugar
4 tsp. baking powder
1/2 tsp. salt
1 c. milk
1 beaten egg
1/4 c. finely diced onion
1/4 c. cooking oil
Mix all ingredients together. Set to one side while
deep frying fish of your choice. When fish are done, drop
batter, which has thickened while sitting, by scant teaspoon-
fuls into hot grease. They will turn over if your grease is
deep enough. When golden brown all around, remove with slotted
spoon. Makes about 4 dozen about 1-inch balls.
