PINEAPPLE MUFFINS

1 slice white bread, made to
crumbs
1/2 tsp. baking soda
1/3 c. milk
1 egg, separated
2 tsp. sugar
1/2 c. crushed pineapple in
its own juice, plus the
juice

Place crumbs, milk and baking soda into bowl. Add egg
yolk, sugar and pineapple. Fold in stiffened egg white. Pour
into nonstick muffin tins. Bake at 350 degrees for 15 minutes. Makes
4.
