ZUCCHINI BREAD 2 eggs 2 c. sugar 3 c. flour 2 c. grated zucchini 1 c. vegetable oil 1 tsp. salt 1 tsp. soda 3 tsp. vanilla 3 tsp. cinnamon 1 c. chopped nuts 1 small can crushed pineapple Beat eggs well. Stir in sugar, oil and vanilla and crushed pineapple. Add grated zucchini. Combine dry ingredi- ents and add to the first mixture, stirring to blend. Add nuts. Pour into 2 greased and floured loaf pans. Bake at 325 degrees for 1 hour or until bread tests done.
