EVER-READY RAISIN BRAN MUFFINS|
1 c. salad oil
1 1/4 c. sugar
1 c. honey
4 beaten eggs
5 c. flour
1 1/2 tsp. salt
5 tsp. baking soda
1 qt. buttermilk
1 (15 oz.) box Raisin Bran
In very large bowl, cream oil with sugar, honey and
eggs. Sift dry ingredients together. Add dry ingredients to
creamed mixture alternately with buttermilk. Mix thoroughly.
Add full box of Raisin Bran. Grease muffin tins. Fill 2/3
full. Bake at 400 degrees for 18 to 20 minutes. Unused portion will
keep refrigerated in tightly covered container for up to 8
weeks. With this recipe you can serve hot muffins anytime.
