PINEAPPLE ZUCCHINI BREAD|
1 c. vegetable oil
2 c. sugar
2 tsp. vanilla, rum or almond
2 c. shredded zucchini
1 (8 1/4 oz.) can crushed
3 c. flour
2 tsp. baking soda
1 1/2 tsp. cinnamon
1 tsp. salt
3/4 tsp. nutmeg
1/4 tsp. baking powder
1 c. raisins
1 c. chopped nuts
In large bowl of electric mixer, beat eggs, oil, sugar
and flavoring until creamy. Stir in zucchini, pineapple and
the juice, flour, soda, baking powder, salt and spices. Fold
in raisins and nuts. Makes 2 loaves, 9 x 5 x 3-inches. Grease
and flour well. Bake at 350 degrees for 1 hour or until done.
Delicious with cream cheese.
