BUTTERSCOTCH PIE

1 c. firmly packed brown sugar
5 Tbsp. flour
few grains salt
1 1/2 c. milk
2 egg yolks
2 Tbsp. butter or margarine
9-inch baked pastry shell

Mix brown sugar, flour and salt. Gradually add milk and
mix well. Beat egg yolks; add. Cook over hot water, stirring
constantly until thick. Add butter or margarine. Pour into
pastry shell. Swirl meringue on filling. Bake in moderate oven
at 325 degrees for 20 minutes. If desired, omit meringue and garnish
with whipped cream.
