CARROT NUT BREAD|
1 1/2 c. sugar
1 c. vegetable oil
2 1/4 c. whole wheat flour
1 1/4 tsp. soda
1 1/2 tsp. cinnamon
1 1/2 tsp. nutmeg
1 1/4 c. raisins
1 1/2 c. chopped walnuts
2 1/4 c. grated carrot
3/4 tsp. salt
Beat eggs well; add sugar and oil. Heat until light.
Sift and add dry ingredients (flour, salt and spices). Stir in
carrot, raisins and walnuts last. Stir until just moistened.
Turn into 9 x 5 x 3-inch loaf pan and bake in preheated 350 degrees
oven for 1 1/4 hours. Cool on wire rack 10 minutes, then
remove from pan.
