CHOCOLATE ZUCCHINI BREAD|
2 1/2 c. sugar
1 c. vegetable oil
1/2 c. cocoa
2 c. grated zucchini
1 Tbsp. vanilla
1 c. chopped pecans
3 c. flour, sifted
1 tsp. baking soda
1 tsp. salt
1 Tbsp. cinnamon
1/4 tsp. baking powder
In mixing bowl mix eggs, sugar, oil and cocoa. Stir in
zucchini, vanilla and nuts. Sift or stir together the remain-
ing ingredients and stir into zucchini mixture, stirring just
to blend. Do not overmix. Pour into 2 greased and floured 8 x
4-inch loaf pans. Bake in preheated 350 degrees oven about 1 hour.
