1/4 c. soft butter
1 c. flour
1/4 tsp. salt
1 c. sugar
2 tsp. baking powder
1/2 c. milk (regular or can)
1 (No. 2) can peaches,
cherries or raspberries,
drained (reserve juice to
pour over fruit)
Heat oven to 375 degrees. Cream together butter and 1/2 cup
sugar until light and fluffy. Stir and mix dry ingredients
into butter and sugar mixture. Add milk and beat until smooth.
Pour into buttered pan. Spoon fruit over batter and sprinkle
with 1/4 to 1/2 cup sugar. Pour reserved fruit juice over
fruit and sugar. Bake approximately 1 hour.
