ZUCCHINI BREAD 3 eggs, beaten 1 c. Mazola oil 2 c. sugar 2 tsp. vanilla 2 c. zucchini, grated and drained 1 1/2 c. crushed pineapple, drained 1/2 c. nuts, chopped 3 c. flour 2 tsp. baking soda 1 tsp. salt 1/2 tsp. baking powder 1 1/2 tsp. cinnamon 2 tsp. nutmeg Combine all ingredients and mix well. Pour in greased and floured pans. Can use 2 pound empty, clean coffee cans or 2 small loaf pans. Makes 2 loaves. Bake 1 hour at 350 degrees.
