2 1/4 c. ground oat flour
1/4 c. firmly packed brown
1 Tbsp. baking powder
1/4 tsp. salt (optional)
3/4 c. skim milk
1/2 c. egg substitute or 2
eggs, beaten
1/4 c. molasses or honey
2 tsp. vegetable oil
1/4 c. chopped nuts (optional)
1/4 c. raisins (optional)

Heat oven to 425 degrees. Grease bottoms only of 12 medium
muffin cups or line with paper baking cups. Combine dry
ingredients. Add milk, egg substitute, molasses and oil; mix
just until dry ingredients are moistened. Stir in nuts and
raisins. Fill prepared muffin cups 3/4 full. Bake 15 to 17
minutes or until deep golden brown. Makes 1 dozen muffins of
148 calories each.
