LITE PECAN PIE 3 egg whites 1/4 c. ice water 2 tsp. vanilla 20 Ritz crackers, crumbled 1/2 tsp. baking powder 1/4 c. nonfat dry milk 1/2 c. sugar substitute 3/4 c. chopped pecans Preheat oven to 350 degrees. Have ready a 9-inch pie pan, lightly buttered. Combine egg whites, dry milk and ice water. Beat until stiff peaks form. Add sugar and vanilla. Fold in pecans, cracker crumbs and baking powder. Spread in pie pan. Bake for 15 to 20 minutes. Makes 8 servings at 180 calories per serving. Diabetic exchange per serving: 1 fat or 1 bread.
