RAISIN NUT BREAD

1 c. seedless raisins
1 c. boiling water plus 1 tsp.
soda
1 c. sugar
2 Tbsp. Wesson oil
1 egg, beaten
1 1/2 c. flour
1/2 tsp. baking powder
3/4 tsp. salt
1 c. chopped nuts

Mix boiling water, raisins and soda; set aside. Let
stand, the longer the better. Combine sugar and oil; beat egg
and add. Combine flour, baking powder, salt and nuts; add to
raisins and sugar mixture. Mix well. Use loaf pan, 8 x 4 x
3-inches or 2 smaller pans. Bake at 350 degrees for 45 minutes.
