COTTAGE CHEESE PIE|
2 Tbsp. cold water
2 Tbsp. lemon juice
1 envelope unflavored gelatin
1/2 c. milk
2 egg yolks
1/3 c. sugar
2 c. creamed cottage cheese
1 tsp. lemon peel or flavoring
graham cracker pie shell
Soften gelatin in water and lemon juice. Heat milk to
boiling point; add beaten egg yolks and sugar. Mix all ingre-
dients together and process in blender until smooth and well
blended. Pour into prepared graham cracker crust. Chill until
set at least 2 hours. Serve with fruit and whipped topping.
