1 c. salad oil
2 c. brown sugar
2 c. grated raw unpeeled
3 c. flour
1 tsp. salt
1 tsp. baking soda
1 Tbsp. vanilla
1 c. chopped nuts
Beat eggs. Add oil, sugar and zucchini; mix well. Stir
in flour, salt and soda. Fold in vanilla and nuts. Pour into
2 greased and floured loaf pans. Bake at 350 degrees for 1 hour.
Remove from pans and cool on rack.
