1 large egg
3/4 c. brown sugar
1 1/3 c. mashed banana
1/2 c. chopped walnuts
1/3 c. oil
1 tsp. vanilla
3/4 c. flour
3/4 c. whole wheat flour
1/2 c. bran
2 tsp. baking powder
1/2 tsp. baking soda
1 tsp. cinnamon
1/4 tsp. salt
With wooden spoon, beat egg and sugar until smooth. Add
bananas, oil and vanilla. Add dry ingredients and blend, just
until moist. Bake at 350 degrees for 20 to 25 minutes.
