PERFECT APPLE PIE
(McCalls, Changed Slightly)
pasty for 2 crust pie (your
favorite recipe)
1 c. sugar
3 level Tbsp. flour
1 tsp. cinnamon
1/2 tsp. nutmeg
1/2 tsp. salt
5 c. or more thinly sliced
apples
2 Tbsp. lemon juice
2 Tbsp. butter or margarine

Mix apples with all ingredients except butter. Put
bottom crust in pie plate and carefully arrange apples. Dot
with butter. Add bottom crust and crimp edges. Bake at 425 degrees
for 45 to 50 minutes or until apples are tender.
For shiny glazed top, brush top crust with 1 egg yolk
beaten slightly with 1 tablespoon water. I sometimes sprinkle
top crust lightly with white sugar before baking.
