SWEET POTATO MUFFINS|
1 3/4 c. flour
dash of salt
1/4 c. brown sugar
1/8 tsp. nutmeg
2 tsp. baking powder
1/4 c. broken pecans
1/4 c. raisins
2 eggs, beaten
4 Tbsp. melted butter
3/4 c. milk
1 mashed baked sweet potato or
leftover sweet potato
1 Tbsp. molasses
Preheat oven to 400 degrees. Sift together dry ingredients.
Mix together wet ingredients. Barely mix the two together.
Pour into greased muffin tins and bake. Bake 20 to 25 minutes.
Yield: 2 dozen.
