GERMAN APPLE PANCAKE (GERMAN) 3 large or 4 medium eggs 3/4 c. white flour 1/2 c. milk 1 tsp. salt Mix ingredients until smooth. Pour this mixture into a 12-inch skillet into which you have already melted 2 table- spoons butter. Place in 450 degrees oven for 10 to 15 minutes. Then reduce oven temperature to 325 degrees for another 10 to 15 minutes. The pancake will well up into huge bubbles - pop these with a fork. When pancake is finished, it will be big, puffy, light and golden brown. While pancake is baking, or anytime before, make apple filling. Apple Filling: 1 lb. (about 3 medium-large apples), peeled, cored, thinly sliced 4 Tbsp. butter 1/2 c. sugar cinnamon and nutmeg to taste Cook about 10 minutes. When pancake is finished, transfer to a platter. Dump apple filling onto one side of pancake. Then fold over. Slice and serve. Sprinkle with confectioners sugar. Serves 6.
