OLD-FASHIONED CRULLERS

4 Tbsp. shortening
1/4 c. sugar
1 c. mashed potatoes
1 beaten egg
1 tsp. vanilla
3 tsp. baking powder
1/2 tsp. salt
flour
confectioners sugar after
cooking

Mix ingredients in order given, using enough flour to
make a soft dough: shortening, sugar, potatoes, egg, vanilla,
baking powder, salt and flour. Roll to 1/2-inch thickness and
cut with doughnut cutter. Fry in hot deep fat. Place crullers
in paper bag with confectioners sugar and shake.
