ZUCCHINI BREAD 3 eggs 1 c. oil 2 c. sugar 2 c. zucchini, grated 2 tsp. vanilla 3 c. flour 3 tsp. cinnamon 1 tsp. soda 1/2 tsp. baking powder 1 tsp. salt Beat eggs until foamy. Add sugar, oil, zucchini and vanilla. Mix all lightly and set aside. Sift together flour, cinnamon, soda, baking powder and salt. Add to zucchini mixture slowly. Stir in 1 cup chopped nuts (optional). Put into 2 greased 9 x 15-inch loaf pans. Bake at 325 degrees for 1 hour. Let set in pan for 10 minutes. Remove from pans to cool.
