CARROT BREAD

1 c. sugar
scant 2/3 c. salad oil
2 eggs
1 1/2 c. flour
1/2 tsp. salt
1 tsp. soda
1 tsp. cinnamon
1 1/2 c. grated carrots
1/3 c. chopped nuts

Cream together sugar, salad oil and eggs. Add flour,
salt, soda and cinnamon. When well mixed, add carrots and
nuts, mix well. Bake in 1 large or 2 small loaf pans at 350 degrees
for 60 minutes for large pan or 45 minutes for small one.
