SODA BREAD

1 c. white flour
1 c. whole wheat flour
1/2 tsp. soda
1/2 tsp. salt
2 Tbsp. sugar (scant)
3/4 c. to 1 c. sour milk or
buttermilk

Mix dry ingredients. Add milk and mix. Shape and place
on floured pan. Flatten slightly. Cut + in top, rather
deeply. Bake at 400 degrees for about 40 minutes. Tap, hollow sound
means its done. Wrap in cloth and pat with moist fingers.
Allow to cool.
Variations: Use all white flour substitute, 1/2 cup
oatmeal for 1/2 cup white flour. Add fruits like currants,
raisins, fruit peel, sesame seeds, etc.
