2/3 c. milk
1/3 c. vegetable oil
1 egg, beaten
1/4 c. honey
1 1/2 oats (quick or
1 c. all-purpose flour
1/2 c. raisins, plumped
1/2 c. chopped nuts (optional)
1/3 c. firmly-packed brown
1 Tbsp. baking powder
3/4 tsp. salt
Add milk, oil, egg and honey to combined remaining
ingredients, mixing by hand just until dry ingredients are
moistened. Fill 12 greased or paper-lined medium-sized muffin
cups 2/3 full. Bake in preheated hot oven (400 degrees) for 15 to 18
minutes or until golden brown. Makes 1 dozen.
