BANANA NUT BREAD

2 1/2 c. sifted flour
2/3 c. sugar
3 tsp. baking powder
1 tsp. salt
1/2 tsp. nutmeg
2 eggs
1/3 c. milk
1/3 c. melted shortening or
cooking oil
1 1/2 c. sliced bananas (2
medium)
1 c. pecan halves

Sift flour, sugar, baking powder, salt and nutmeg into
mixing bowl. Stir eggs, milk, shortening or oil and bananas 5
seconds or until smooth. Add pecans; stir 3 to 4 seconds or
until pecans are coarsely chopped. Pour over dry ingredients;
mix just until dry ingredients are moistened. Pour into
greased 9 x 5 x 3-inch loaf pan. Bake in moderate 350 degrees oven
until done, about 1 hour. Cool in pan 5 minutes; remove from
pan and finish cooling on rack. Makes one 9 x 5 x 3-inch loaf.
