BEST BRAN MUFFINS 1 1/4 c. all-purpose flour 1 Tbsp. baking powder 1/2 tsp. salt (optional) 1/2 c. sugar 1 1/4 c. milk 2 c. shreds of wheat bran cereal with raisins, apples and almonds 1 egg 1/4 c. vegetable oil Heat oven to 400 degrees. Grease bottom only of 12 medium muffin cups, 2 1/2 x 1 1/4-inches or line with paper baking cups. Stir together flour, baking powder, salt and sugar. Set aside. Combine cereal and milk in large bowl, let stand 4 minutes or until cereal is softened. Add egg and oil. Beat well. Add flour mixture, stirring only until combined. Divide batter among muffin cups. Bake until test done, about 20 minutes.
