BEST BRAN MUFFINS|
1 1/4 c. all-purpose flour
1 Tbsp. baking powder
1/2 tsp. salt (optional)
1/2 c. sugar
1 1/4 c. milk
2 c. shreds of wheat bran
cereal with raisins, apples
1/4 c. vegetable oil
Heat oven to 400 degrees. Grease bottom only of 12 medium
muffin cups, 2 1/2 x 1 1/4-inches or line with paper baking
cups. Stir together flour, baking powder, salt and sugar. Set
aside. Combine cereal and milk in large bowl, let stand 4
minutes or until cereal is softened. Add egg and oil. Beat
well. Add flour mixture, stirring only until combined. Divide
batter among muffin cups. Bake until test done, about 20
