HUSH PUPPIES 2 c. yellow cornmeal 1 c. all-purpose flour 1 Tbsp. sugar 1 Tbsp. baking powder 1/2 tsp. baking soda 1 tsp. salt 1 tsp. coarsely ground pepper 1 egg 1/2 to 1 tsp. hot sauce 1 1/2 c. buttermilk 1 c. minced onion 1 c. whole kernel corn vegetable oil Combine cornmeal, flour, sugar, baking powder, baking soda, salt and ground pepper in a medium bowl; set aside. Combine egg and hot sauce; stir in buttermilk. Pour into dry ingredients, stirring just to mix. Stir in onion and corn. (Do not overmix batter.) Drop batter by tablespoonfuls into deep, hot oil (350 degrees); cook only a few at a time, turning once. Fry 3 minutes or until golden brown. Drain on paper towels. Yields 3 dozen.
