APPLE PIE pastry for 1 double-crust (9-inch) pie 1/2 c. sugar 3 Tbsp. all-purpose flour 1/4 tsp. ground nutmeg 1/4 c. orange juice 1 1/2 Tbsp. light corn syrup 2 1/2 Tbsp. butter or margarine, melted 8 medium-sized cooking apples, peeled, cored and thinly sliced Roll half of pastry to 1/8-inch thickness on a lightly floured surface; fit into a 9-inch pie plate. Set aside Combine sugar, flour, nutmeg, orange juice, syrup and butter in a large mixing bowl; stir well. Add apples, stirring lightly to coat; spoon filling into pastry shell. Roll remain- ing pastry to 1/8-inch thickness; place over filling. Trim edges; seal and flute. Cut slits in top crust to allow steam to escape. Bake at 375 degrees for 15 minutes. Reduce heat to 300 degrees and bake an additional 45 minutes. Cool pie before slicing. Yields one 9-inch pie.
