MASH POTATO DOUGHNUTS

1/2 c. mashed potatoes
1 pkg. yeast
3/4 c. warm water
1/2 c. sugar
1/2 tsp. salt
1 egg, beaten
1/3 c. shortening
3 1/2 c. flour

Cook 1 medium potato until soft. Mash; set aside.
Dissolve yeast in warm water, add sugar. Put flour in bowl
(make a well in flour). Add mixture of beaten egg, salt,
shortening and mash potato. Mix well. Knead dough until it
handles without dough being sticky. Cover with warm damp
cloth. Let rise in warm place, until double in size. Knead
again. Roll out, cut out with dough cutter or floured jar.
Let raise again. Deep fry until golden brown on both sides.
Place on paper towel. Sprinkle with brown sugar, powdered
sugar, glaze or chopped nuts.
