APPLE TEA BREAD

3 c. flour
1 1/4 c. sugar
2 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. ground cloves
1 c. raisins
4 medium apples
1/2 c. (1 stick) butter or
margarine
1/2 c. vegetable oil
1 Tbsp. vanilla
2 large eggs

Preheat oven to 325 degrees. Grease and flour 3 empty 1 pound
metal coffee cans. In large bowl, combine flour, sugar, baking
soda, cinnamon, cloves and raisins. Core the apples and grate
into the flour mixture. In saucepan melt butter. Remove from
heat; stir in oil, vanilla and eggs. Stir butter mixture into
dry ingredients. Spoon batter into prepared cans. Bake 1 1/4
hours or until a cake tester or skewer inserted in center comes
out clean. Cool in pans or wire rack for 10 minutes. Remove
from cans; cool breads completely. Wrap and store overnight
before slicing. Makes 3 loaves.
