PINEAPPLE ZUCCHINI BREAD

3 eggs
2 c. sugar
2 tsp. vanilla
1 c. oil
2 c. flour
2 c. zucchini, peeled, grated
and drained
1 c. crushed, grated
pineapple, drained
1 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
1 chopped pecans
1/2 c. raisins (optional)

Beat eggs, sugar and oil until light and fluffy. Add
vanilla, flour, baking powder, salt and soda. Mix well. Add
pineapple, nuts and raisins and stir. Put zucchini in last and
stir (do not beat zucchini as it will get watery). Bake in
loaf pan at 325 degrees for 1 hour and 20 minutes. Makes 1 large loaf
or 2 gift size loaves.
