PUMPKIN SPICE BREAD

1 1/2 c. sugar
1 c. vegetable oil
3 large eggs
1 (16 oz.) can pumpkin
3 c. flour
1 tsp. baking powder
1 tsp. baking soda
1 Tbsp. pumpkin pie spice
1/2 tsp. salt
1/2 c. chopped pecans
12 pecan halves

Preheat oven to 350 degrees. Grease 4 (6 x 3 1/2-inch) loaf
pans. In large bowl, with mixer, beat sugar and oil until well
mixed. Beat in eggs, one at a time and beat until light. Beat
in pumpkin. In medium bowl, combine flour, baking powder,
soda, spice and salt. Stir flour mixture into sugar mixture
just until blended. Fold in chopped pecans. Pour batter into
prepared pans. Arrange 3 pecan halves on top of each loaf.
Bake about 40 minutes. Cool in pans 15 minutes. Remove from
pans; cool completely on wire rack. Wrap and store overnight
before slicing. Makes 4 small loaves.
