MOM'S FRIED APPLE PIES

Pastry:

1 c. sifted flour
1/2 tsp. salt
1 tsp. baking powder
4 Tbsp. shortening (measured
exactly)
1/4 c. hot water
4 Tbsp. butter or margarine
1 tsp. lemon juice
1 egg yolk, well beaten

Sift flour, salt and baking powder together in bowl.
Cut in shortening. Pour hot water over butter and stir until
melted. Let cool to lukewarm. Add lemon juice and egg yolk.
Stir into dry ingredients, only until mixed. Chill thoroughly.
Roll pastry out in small rounds about 1/4-inch thick on well
dusted surface (use powdered sugar). Rounds should be 4 to
5-inches in diameter. Put 2 tablespoons spiced applesauce in
center of round and fold in half. Pinch edges together. (May
also use well chopped apple pieces with cinnamon and sugar.)
Fry in hot oil until puffy and light brown. Sprinkle with
powdered sugar.
