ZUCCHINI BREAD 3 eggs 1 c. brown sugar 1 c. granulated sugar 1 c. oil 2 c. zucchini, grated 1 tsp. salt 1 c. raisins or dates 3 c. flour 1 tsp. vanilla 1/2 tsp. cinnamon 1 tsp. baking powder 1 tsp. soda 1 c. chopped nuts Heat oven to 325 degrees. Beat eggs until frothy; stir in sugar, oil, zucchini and vanilla. Combine dry ingredients; stir into zucchini mixture until well mixed. Stir in nuts; pour into well greased 9 x 5 x 3-inch pans. Bake 1 hour. Cool 10 minutes in pans. Remove; cool before cutting.
