ZUCCHINI BREAD 3 eggs 2 c. sugar 2 c. (3 medium) shredded zucchini 3 c. cooking oil 3 c. flour 1 tsp. soda 2 tsp. cinnamon 1/4 tsp. cloves 2 tsp. vanilla 1 tsp. salt 1 tsp. baking powder 1/2 tsp. nutmeg 1/2 c. chopped nuts Preheat oven to 325 degrees. Grease (not oil) bottoms only of 2 (9 x 5-inch) or 8 x 4-inch pans. In large bowl, beat eggs until foamy. Stir in sugar, zucchini, cooking oil and vanilla. (Lightly spoon flour into measuring cup; level off.) Add remaining ingredients; mix well. Pour batter into greased pans. Bake 50 to 60 minutes until a toothpick inserted into center comes out clean. Cool 10 minutes in pans, then turn onto cooling racks.
