CARROT BREAD
(Microwave)
1/2 c. whole wheat flour
1/2 c. all-purpose flour
1/2 c. granulated sugar
1/4 c. brown sugar
1 tsp. baking soda
1 tsp. baking powder
1 tsp. cinnamon
3/4 tsp. salt (optional)
1/2 c. vegetable oil
2 eggs
1 tsp. vanilla
2 c. grated carrot
1/3 c. raisins (optional)

Lightly grease bottom of loaf dish, 9 x 5-inch. Combine
flours, sugars, baking soda, baking powder, cinnamon and salt
in medium mixing bowl. Add remaining ingredients, except
carrots and raisins. Beat at low speed until just blended.
Stir in carrots and raisins. Pour into loaf dish. Place loaf
dish on inverted saucer in microwave. Microwave at Medium
(70%), 6 minutes. Cover with Saran Wrap, vented. Micro on
Medium until toothpick comes out clean, 3 to 8 minutes. Rotate
every 2 to 3 minutes. Cool on countertop 5 minutes. Store in
refrigerator. Makes 1 loaf.
