SOUTHERN PECAN PIE

pastry for a 9-inch shell
1 c. pecan halves or more
3 eggs
1 Tbsp. melted butter
1 c. light corn syrup
1/2 tsp. vanilla
1 c. sugar
1 Tbsp. flour

Arrange pecan halves in the bottom of the unbaked pie
shell (face up). Beat the eggs; add the butter, corn syrup and
vanilla. Stir until well blended. Combine the sugar and
flour; blend this with the egg mixture. Pour carefully over
nuts in the pie shell. Let stand until nuts rise to the
surface. Bake in moderate 350 degrees oven for 45 minutes. The nuts
will glaze during baking. Serves 6.
