ZUCCHINI BREAD-CAKE

3 eggs
2 c. sugar
1 c. oil
1 Tbsp. vanilla
2 c. coarsely grated zucchini,
loosely packed
2 c. flour
1 Tbsp. cinnamon
2 tsp. baking soda
1 tsp. salt
1/2 tsp. baking powder
1 c. chopped walnuts

In a large mixing bowl, beat eggs until frothy. Beat in
sugar, oil and vanilla. Beat mixture until thick and lemon
colored. Stir in zucchini. Sift together dry ingredients; add
to zucchini mixture. Fold in walnuts. Pour mixture into 2
greased and floured 8 x 4 1/2 x 3-inch loaf pans or a Bundt pan
and bake at 350 degrees for 1 hour or until toothpick is inserted in
center and comes out clean. Makes 2 loaves.
