SWEET POTATO-PRALINE PIE

1/2 c. firmly packed brown
sugar
1/2 c. chopped pecans
3 Tbsp. margarine, melted
2 eggs
1 c. sugar
1/2 c. firmly packed sugar
1 tsp. cinnamon
1/2 tsp. ginger
1/2 tsp. nutmeg
1 2/3 c. mashed, cooked sweet
potatoes
1/2 c. half and half
1 unbaked 9-inch pastry shell

Combine 1/2 cup brown sugar, pecans and butter; mix well
and set aside. Beat eggs in large bowl with a wire whisk. Add
sugar, brown sugar, cinnamon, ginger, nutmeg and potatoes.
Gradually add half and half, stirring until well blended. Pour
into pastry shell. Bake at 400 degrees for 10 minutes; reduce oven
temperature to 350 degrees and bake 20 minutes longer. Sprinkle pecan
mixture evenly over pie; bake an additional 25 to 30 minutes or
until knife inserted in center comes out clean. Yield: 1
(9-inch) pie.
