CHOCOLATE PIES

1 c. sugar
1/2 c. flour or 3 Tbsp.
cornstarch
1/4 tsp. salt
2 c. milk
3 eggs (separate egg whites
for meringue)
2 tsp. butter
1 tsp. vanilla
2 Tbsp. cocoa

Meringue: Beat 3 egg whites and 1/4 teaspoon cream of
tartar until stiff peaks form. Gradually add 6 tablespoons of
sugar and beat until stiff.
Mix sugar, flour, egg yolks and cocoa in a saucepan;
gradually stir in 2 cups of milk. Cook and stir over medium
heat until mixture boils and thickens. Cook 2 minutes more and
remove from heat. Stir small amount into yolks of eggs. Cook
2 more minutes, stirring constantly. Remove from heat and add
2 tablespoons butter and 1 teaspoon vanilla. Cool and pour
into crust.
