FRIED PIES

9 c. self-rising flour
3/4 c. sugar
1 c. shortening
1 large can cream with 1 can
water

Filling:
1/2 gal. apples, sweetened to
taste
1 Tbsp. apple pie spice or to
taste
3 Tbsp. cornstarch

Roll out dough thin. Use saucer as a pattern, cut
around saucer with knife. Place cooled filling in center of
circle. Use pastry brush dipped in water and go around bottom
half of circle. Bring top of circle over to bottom half and
seal edges together. Deep fry until golden brown.
Filling: Add cornstarch to apples and spice. Cook
until thick. Put in refrigerator until cool. Makes 3 dozen
pies.
