SOURDOUGH STARTER
(Grandmother Smart's Recipe)
1 c. grated raw potatoes
1 Tbsp. flour
1 Tbsp. sugar
1 Tbsp. salt
1 qt. water
1 pkg. dry yeast

In saucepan combine potatoes, flour, sugar, salt and
water. Bring to a boil. Boil until clear, being careful it
does not burn. Cool, then stir in yeast. Cover lightly. Let
stand for 24 hours before using at room temperature. Always
keep 1 cup starter to add to make more.
