DOUGHNUTS (NEW ENGLAND)

4 egg yolks
1 c. sugar
2 Tbsp. soft shortening or
butter
3/4 c. thick buttermilk or
sour milk
3 1/2 c. sifted flour
2 tsp. baking powder
1 tsp. soda
1/2 tsp. salt
1/4 tsp. nutmeg
1/4 tsp. cinnamon

Beat well egg yolks. Beat in sugar, shortening or
butter. Stir in buttermilk or sour milk. Sift together sifted
flour, baking powder, soda, salt, nutmeg and cinnamon. Vanilla
may be used instead of spices. Chill dough for 2 hours or
overnight. Roll out gently, cut and fry in fat at 370 degrees to 380 degrees.
Drain and shake in a bag of sugar. Store in tightly closed
jar.
