FRUIT AND NUT BRAN MUFFINS 2 c. Nabisco 100% Bran 1 c. milk 1 c. flour 2/3 c. drained, chopped peach slices, pear slices, pineapple tidbits or mandarin oranges 1/3 c. light brown sugar 2 tsp. baking powder 1/3 c. pecan pieces or walnuts, chopped 1/4 c. margarine or butter blend, melted 1 egg, beaten In medium bowl combine bran and milk; let stand for 5 minutes. In small bowl combine flour, sugar, baking powder and baking soda; set aside. Stir fruit, nuts, margarine and egg into bran mixture. Stir in flour mixture just until blended. Spoon into 12 greased 2 1/2 inch or 6 greased 3-inch muffin pan cups. Bake at 400 degrees for 20 to 25 minutes or until done. Remove from pan; cool on wire rack. Note: Six greased (6 ounce) custard cups may be substi- tuted. Bake at 375 degrees for 25 to 30 minutes. Makes 1 dozen medium or 6 large muffins.
