ZUCCHINI BREAD 3 eggs 1 c. oil 2 c. sugar 2 c. grated zucchini 1 c. chopped pecans 1 tsp. vanilla 1/2 tsp. salt 4 tsp. baking powder 1 tsp. soda 3 c. flour 2 tsp. cinnamon 1/2 tsp. cloves 1/2 tsp. nutmeg raisins (if desired) Beat eggs until light and foamy. Add oil, sugar and vanilla. Mix well. Mix dry ingredients well and add pecans and zucchini to coat. Mix with eggs. Pour into 3 greased and floured loaf pans. Bake at 325 degrees until done, about 1 to 1 1/14 hours.
