BANANA-RAISIN BREAD 1 3/4 c. flour 1 tsp. baking powder 1/2 c. shortening 1 c. mashed bananas 2/3 c. sugar 1/2 tsp. salt 1/4 tsp. soda 1 c. raisins 2 eggs, slightly beaten Preheat oven to 350 degrees. Grease and flour 9 x 5-inch loaf pan. In large bowl, with fork, mix flour, baking powder, sugar, salt and soda. With pastry blender, cut shortening until mixture resembles coarse crumbs. With fork, stir in bananas, raisins and eggs until just blended. Spread batter evenly in pan. Bake 55 minutes to 1 hour or until toothpick comes out clean. Cool in pan 10 minutes. Remove and cool longer.
